The Skinny Pancake claims to be the "most locally-sourced" airport eatery in the U.S. It is located in the North and South terminals, as well as at the Chubby Muffin kiosk before you enter airport security.
Menu items include paninis like the Ramble, a sandwich of Vermont cured and smoked ham, Vermont apples, red onions, Cabot cheddar and chipotle mayo. The restaurant offers a large breakfast menu, most of which can be made gluten free with the addition of buckwheat. Vegans can also enjoy their food upon request. Sweet crepes like the Pooh Bear with cinnamon sugar and Vermont honey are great if you're looking for a lighter meal.
For something more substantial, try the Breakfast Monster, made with organic, cage-free eggs, caramelized onions, house-made sunflower-basil pesto, baby spinach and Cabot cheddar.
